A tasty vegan take on the traditional chicken tikka masala dish, made with seitan instead of chicken for a hearty and flavorful meal.
Ingredients:
- 300g seitan, sliced into tikka-sized pieces
- 1 cup vegan yogurt
- 2 tablespoons lemon juice
- 2 tablespoons minced garlic
- 2 tablespoons minced ginger
- 1 tablespoon garam masala
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- Salt to taste
- 2 tablespoons oil
- 1 onion, finely chopped
- 2 tomatoes, blended into a puree
- 1 cup coconut milk
- Fresh coriander leaves for garnish
Instructions:
In a bowl, mix vegan yogurt, lemon juice, minced garlic, minced ginger, garam masala, paprika, ground cumin, ground coriander, turmeric, and salt
Add seitan slices to the marinade, coating them well
Let it marinate for at least 30 minutes
Heat oil in a pan over medium heat
Add chopped onion and saut until translucent
Add the marinated seitan slices to the pan
Cook until seitan is browned on all sides
Pour in the tomato puree and coconut milk
Stir well to combine
Simmer the mixture for 15-20 minutes, stirring occasionally, until the sauce thickens
Garnish with fresh coriander leaves before serving
